Actually, meal timing has very little effect. Eating at night causing weight gain is a bit of a myth. Those who eat at night tend to eat more as they have a longer eating 'window' so it's extra calories rather than timing that do the trick. And your body won't go into starvation mode until 36 hours without food (or longer periods of fairly severe calorie restriction), so the idea that skipping breakfast makes you gain wait is rubbish. That's based on studies funded by (you guessed it) cereal manufacturers. I'd have to echo Atlya's comments and say take it slow. Panhype2 makes an excellent point about your modelling career too. As sexually exciting as it may be to grow quickly (and to watch you grow quickly!) I think giving your body time will help you stay healthier and more active. Not much point gaining quickly just to feel crappy!
